Dark Chocolate Dipped Oranges – Little Big H

I let Big H try the chocolate dipped oranges but I am keeping sugar to a minimum for as long as possible – so basically he gets just the orange and I get the chocolate dipped ones!  Be warned they are totally addictive.  I bought the dehydrator some time ago with the sole purpose of making these – they are that good!

  • 4 oranges or as many as you like
  • 1 block of good quality dark chocolate
  • Wash the oranges really well because we are keeping the skin on. Then slice very finely. I used a mandolin which makes easy work of this
  • If you have a food dehydrator, use according to your machines guidelines. I dried mine for approx a day and a half but this really depends on how juicy your oranges are and the thickness of the slices
  • If using the oven, preheat oven to 160 degrees C, pat oranges with a paper towel to absorb some of the moisture and then lay oranges on a fine wire rack. (something like a cake cooling rack would do). Bake for approximately 20-30 minutes checking often. Like above this really depends on the thickness of the slices so check regularly
  • Break the chocolate up and add to a saucepan or metal bowl. Sit this over another saucepan with water in it to create a double boiler. Heat on the stove top until the chocolate has melted. Remove from the heat and dip the orange slices in to the chocolate and place on baking paper to set (takes about 20 minutes)

My oven instruction is a quick technique that I experimented with, but you don’t quite achieve the results you do in the dehydrator. A quick search of the web and there are longer techniques that involve drying in the oven over 8 hrs.

Healthy Avocado Chia Popsicles – Little Big H

If you live in Sydney then you would have been melting along with us in the heat over the past few weeks.  These healthy Avocado Chia Popsicles are just what we needed.  

They are so good for you that you could eat them for breakfast…  They contain avocado, coconut milk, chia seeds, honey and strawberries – that’s it!  See all good things.

I have adapted this recipe from one of my most popular post for avocado and lime ice-cream, but there is no ice-cream maker required.  Just a high-speed blender or food processor.

  • 1/2 avocado
  • 1 cup coconut milk
  • 3 tablespoons honey , or to taste
  • 1 – 2 tablespoons lemon juice
  • 2 tbs chia seeds
  • 6 strawberries , sliced
  • Add all ingredients (expect the chia seeds and strawberries to a high speed blender or food processor.
  • Process until smooth. Stir through the chia seeds. Add sliced strawberries to your popsicle moulds and add the avocado mixture. Add sticks and freeze.

Red currant, Blueberry & Yoghurt Popsicles – Little Big H

  • 1 cup blueberries
  • 1 cup red currants
  • 1 cup natural yoghurt
  • 2 teaspoons brown sugar
  • In a blender or food processor, puree the blueberries along with a teaspoon of sugar – set aside
  • In the blender puree the red currants along with a teaspoon of sugar – set aside
  • Pour the three mixtures (red currant, blueberry, yoghurt), alternating, into popsicle moulds to create about 5 layers of the mixtures
  • With a thin knife or skewer insert into mixture and swirl together slightly in an up-and-down motion
  • Insert ice-block sticks and freeze until solid

Use fresh or frozen berries (if using frozen, check the packet to see if they can be re-frozen. If not, cook in a saucepan with the sugar and let cool. Then continue with the above steps)Can’t find red currants? Try raspberries or strawberries

Use up to a tablespoon of sugar if you like your popsicles sweet…
