The sous vide cooks apricots amazingly well. They have a beautiful delicate velvety texture once cooked. You could also make this dish on the stove top if you don’t have a sous vide. Mango and Puffed Amaranth Parfait – Little Big H

Parfait’s are a favourite breakfast of mine.  They really are so easy to make and you can fill them with just about anything you have on hand.  This mango and puffed amaranth parfait is a new favourite combination.  Summery, light and so delicious.  It would also make a great healthy dessert. 

Puffed amaranth is available from health food stores and some supermarkets.  They are really tiny, airy puffs and are great for you.  H absolutely loves it but if you think your child wouldn’t go for it, you can combine it with the yogurt and it will go virtually unnoticed.

  • Puffed Amaranth
  • Natural Yoghurt
  • 1 Mango; flesh chopped
  • 2 passionfruit
  • Add some puffed amaranth to the bottom of your two glass and top with a couple of tablespoon of yoghurt. Top that with half the mango and then repeat to create another layer. Top with passionfruit and serve.

Puffed amaranth is also called popped amaranth.I haven’t given exact quantities because you can just add an amount that suits you.

For tiny babies, puree the mango rather than chop

Irish Stew – Little Big H

This is a really easy dish to prepare and it has a wonderful flavour for not a whole lot of effort.  To speed things up you could use a pressure cooker…

  • 800 g lamb neck chops
  • 1 tablespoon olive oil
  • 2 brown onions , chopped
  • 2 large carrots , chopped into rounds
  • 1 large parsnip , chopped
  • 1 kg potatoes , chopped
  • 3 cups beef stock
  • 2 tablespoons tomato sauce
  • 1 tablespoon worcestershire sauce
  • 3 springs thyme
  • A good handful of parsley; coarsely chopped
  • Preheat oven to 160 degrees C (320 degrees F). Heat the olive oil in a frying pan over medium-high heat and brown the chops. Layer vegetables and chops in a large oven proof dish. Combine the stock, tomato paste, and sauce and pour over the chops. Add the thyme and cook, covered for 2.5 hours. Uncover and cook for another 30 minutes or until the lamb in very tender. Serve garnished with parsley.

For young babies, simply puree in a blender until the desired consistency is reached

Quinoa, Broad Bean & Mint Salad – Little Big H

Big H loves this salad and it is super easy and quick to make.  Shelling the broad beans is a little time-consuming but you could use frozen shelled broad bean instead if  you like.

  • 1 cup of Quinoa
  • 1 cup of broad beans
  • 1 cup of peas
  • 1 cup of roughly torn mint leaves
  • juice of half a lemon
  • olive oil
  • salt & pepper *optional for baby
  • Cook Quinoa to packet instructions (usually 1 cup of quinoa to 2 cups of water. Bring to the boil then simmer till cooked). Transfer to a large bowl to dry and cool as much as possible. Refrigerate until needed
  • Blanch broad beans and peas until tender. Run under cold water to stop cooking process. Keep a 1/4 cup of broad beans and 1/4 cup of peas aside for babies portion, and pulse in a food processor or blender. Then combine with remaining ingredients.
  • Combine all the remaining ingredients for the family

This is a delicate tasting puree and a great introduction to fish for your baby.  Any delicate tasting white fish will be fine in the recipe and combined with the witlof (Belgian endive) it is a lovely combination.
