Fruit Archives – Page 2 of 3 – Little Big H

H and I went to the Northside Produce Market last weekend and bought these gorgeous fresh figs.  It was our first time there but we will definitely be going back.  We also bought a huge box of cherries, rhubarb, golden beets, zucchini flowers and H’s favourite, tomatoes… NORTHSIDE PRODUCE MARKET , NORTH SYDNEY  

It doesn’t get much simpler than this – Banana dipped in lemon juice and tossed in coconut.  A nice easy snack for the little ones – it also makes it easy for them to grip.

Healthy zucchini, corn and tomato muffin – Little Big H

H and I have been doing a stack of baking lately – homemade bread, pizzas, cakes and muffins.  I think the winter weather has something to do with it!  I’ve experimented a lot with muffin recipes and I have to say, I think I’ve found a winner.  These healthy zucchini, corn and tomato muffins are easy to make and are pillowy soft – just how I like them.  The trick is to not over mix.  When adding the wet ingredients to the dry ingredients, stir with a wooden spoon until just combined and you are ready to go.  

Muffins are perfect for a light lunch and are great for the kids lunch boxes.  The recipe makes a large batch so freeze what you don’t use for another day.  I personally love having a few healthy savoury muffins in the freezer ready for a quick snack or to pack for the little guy if we are heading out for the day. 

I’ve used zucchini, corn, tomato and cheese but feel free to substitute other vegetables.  If you are using particularly dry ingredients and the mixture feels a little dry, just add a splash more milk till you achieve a thick but loose mixture.  It shouldn’t be in any way runny – I need to start taking some action shot, what do you think, would that be helpful?

  • 1 cob of corn (ear of corn)
  • 1 tomato
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup grated tasty cheese (reserving a little to sprinkle on top before going in the oven)
  • 2 cups self-raising flour
  • 1 egg
  • 1 cup milk
  • 150 grams butter; melted
  • salt & pepper (optional)
  • Pre-heat oven to 180 degrees C (350 degrees F). Combine the dry ingredient (flour, cheese, zucchini, corn, tomato, salt and pepper) in a bowl and mix a little to combine.
  • In a small bowl combine the egg and milk and light whisk with a folk. Add the melted butter. Add the mixture to dry ingredients and stir with a wooden spoon until combined. Don’t over mix or you will end up with a tough muffin! If the mixture feel a little dry add a splash more milk.
  • Spray the muffins tins with oil or grease with butter. Fill tin 3/4 full of the mixture and sprinkle with the remaining cheese. Bake for 15 to 20 minutes. Test with a skewer, if it comes out clean, they are ready. Serve warm

Makes 12 large muffins and 12 mini muffins.
Don’t be tempted to overfill the muffins – fill only 3/4 of the way up the muffin tin. They will work out a lot better.

Mango-Rooibos Bubble Tea – Little Big H

Mango-Rooibos Bubble Tea – healthy, easy and perfect for ages 1 – 100….  

During my uni days I drank my fair share of bubble tea.  It was new to my area at the time and I always ordered it with tapioca and pudding.  

My version here is very simple.  It’s also healthy, sugar-free and caffeine free so its perfect for toddlers.  It is basically mango and pineapple blended with cooled rooibos tea to make a smoothie.  If mangos aren’t in season, you could use what ever fruit you like.  Add the cooked tapioca pearls and you are done.  Enjoy xx

  • 1 ripe mangos;
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup cooled rooibos tea
  • 1 tablespoon of your sweetener of choice (maple syrup / honey / brown rice syrup)
  • Handful of ice-cubes
  • 1/4 cup black large tapioca pearls
  • Add a few cups of water to a saucepan and once boiling add your tapioca pearls. Simmer until the pearls are tender. About 10 minutes. Drain and rinse under cold water. Leave to sit in cold water until you prepare the remaining ingredients.
  • Add the mango, pineapple and ice to a blender along with the rooibos tea and blend until smooth. Add sweetener to suit your taste.
  • Drain and add tapioca pearls to the bottom of your two glasses and top with the smoothie mixture. Serve cold.

Black tapioca pearls are available from asian grocersRooibos tea is available from supermarkets and is a great options for kids. Caffeine free

Orecchiette with Broccoli and Anchovies – Little Big H

  • 3 tablespoons olive oil
  • 1 head of broccoli
  • 1 garlic cloves , crushed
  • 3 anchovy fillets (I used tin anchovies in olive oil but you could use fresh), chopped
  • 250 g orecchiette pasta
  • Parmesan cheese
  • Wash and separate broccoli into small florets. Cook in a pot of salted boiling water until very tender, About 5-10 minutes. Drain and set aside. Cook the pasta in salted boiling water according to the packet instructions. Once cooked, drain and reserve a little of the cooking water
  • Heat the olive oil in a frying pan and add the garlic and anchovies. Mash the anchovies with the back of the spoon. They should melt into the olive oil. Add the broccoli and stir to combine so it absorbs the flavour of the anchovies. Then add the cooked pasta and stir to combine. Add a little of the reserved water to loosen the mixture if necessary
  • Serve immediately sprinkled with parmesan
