Quick Crispy Potatoes with Nigella Seeds – Little Big H

This quick crispy potato with nigella seeds recipe happened when I was in a bit of a rush.  I was going to boil some potatoes but noticed my nigella seed mix sitting there and decided to give my potatoes a quick toss in the pan, with some oil and a tablespoon of the spice mixture – they were delicious. Better than plain old boiled potatoes lets say! 

The nigella seeds spice mixture will make more than you need for this recipe, so keep it in a jar and add some to your sautéed veggies, potato salads, tomatoes salads, cous cous, quinoa salads, etc.

  • 1 kg chat potatoes (or as many or few as you like)
  • 1 tablespoon nigella seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon oil
  • Salt & pepper
  • parsley leaves to serve; roughly chopped
  • Wash the potatoes well because we are leaving the skin on. Chop in half and add to a pot of salted water and cook until tender. Drain and set aside.
  • While the potatoes are cooking, add the spices to a mortar and pestle and bash/grind until ground.
  • Add 1 tablespoons oil to a frying pan over high heat and add the potatoes. Give the pan a toss so the potatoes are evenly browned. Once golden add a tablespoon of the spice mixture and toss to coat. Season with salt and pepper, serve warm garnished with parsley.

Sole Purée with Cauliflower and Witlof – Little Big H

This is a delicate tasting puree and a great introduction to fish for your baby.  Any delicate tasting white fish will be fine in the recipe and combined with the witlof (Belgian endive) it is a lovely combination.

  • 150 g Sole Fillet (approximately 2 fillets with skin off and bones removed)
  • 2 cups roughly chopped cauliflower
  • 1 witlof
  • a few sprigs of parsley
  • zest of one lemon and a little squeeze of lemon juice
  • Add all ingredients to a steamer basket except the lemon juice and cook until the vegetables are tender and the fish is cooked through. About 15 minutes
  • Once cooked add to a blender with a squeeze of lemon juice and puree until smooth
  • Serve warm, freeze remainder

Makes approximately 8 x 60 ml portions

Teriyaki Salmon – Little Big H

Teriyaki salmon is one of those dishes you assume is time-consuming and has a million ingredients but it is actually very simple.  It has only 4 ingredients: salmon, sugar, soy and mirin.  Simple but really delicious.  Serve with a salad and you have a super easy weeknight meal.

I cook the salmon under the grill when making this dish.  The marinade caramelises really nicely that way.  You will see it bubbling away and getting nice little dark caramel bits – yum.   It will take about 5 minutes for medium, and I always baste it a couple of times during the cooking – just to get as much of the yummy marinade as possible on the salmon.  Enjoy xx

  • 4 pieces skinless salmon
  • 1/4 cup sugar
  • 1/4 cup soy
  • 1/4 cup mirin
  • toasted sesame seeds to serve
  • spring onion to serve; sliced
  • Combine the sugar, soy and mirin in a bowl. Stir until the sugar has dissolved. Add the salmon and place in the fridge to marinade for preferably 30 minutes.
  • Heat the grill to very hot and move the oven tray to the top shelf. Remove the salmon from the marinade and add to a baking dish. Baste the salmon so you have as much marinade on there as possible. Place under the grill for about 5 minutes, basting the salmon again during that time. Its ready when it is golden on top and just cooked through. Cook for a few extra minutes if you like it well cooked.

I like to add the salmon to a baking dish so the marinade doesn’t run everywhere. Once you have some of the marinade in the bottom of the baking dish, use that to baste the salmon rather than dipping into the marinade that had the raw salmon in it. You should see it bubbling away and getting thicker so it will stick to the salmon better anyway.
Cooking time will very depending on the thickness of your salmon

Roast Pumpkin with Chickpeas and Coriander – Little Big H

  • 1/2 Pumpkin
  • small tin of Chickpeas
  • Coriander
  • Cinnamon
  • Nutmeg
  • Olive oil
  • Pre-heat oven to 190 degrees c (374 degrees F). Remove the pumpkin skin and seeds and cut into small size chunks. Add to roasting pan and drizzle with olive oil. Dust with cinnamon and nutmeg. Roast for 35 minutes (this produces pumpkin that can be easily mashed with a fork. For firmer pumpkin cook for less time or cut in to larger size chunks)
  • Drain and rinse chickpeas. Mash chickpeas with a fork to break then up a little. Finely chop coriander. Combine roast pumpkin, chickpeas and coriander in bowl and toss to coat the pumpkin. (optional: drizzle with olive oil)

Chilled Fennel Soup – Little Big H

With consecutive 42 degree days in Melbourne this week, I was keen for somethings chilled, and this was the result. A silky smooth chilled soup.  I wasn’t sure that Big H would go for the aniseed taste of the fennel but he did!

Fennel is also great for breastfeeding mums with supply or letdown reflex issues – maybe that’s why H like it.  I consumed by fair share of fennel in the early days after being given that advise.  I added it to smoothies, roasted it, grilled it, soups, etc…

  • 300 g fennel (approximately 2 large bulbs)
  • 1/2 leek
  • Butter
  • Tarragon
  • 2 1/2 cups organic chicken stock (or vegetable stock)
  • Sauté the trimmed and chopped fennel and leek with 1 tablespoon of butter to soften – about 5 minutes
  • Add 2 1/2 cups stock; boil, cover, lower the heat and simmer until fennel is tender – about 15 minutes
  • I used a vitamin to purée which produces a beautiful creamy soup but depending on your type of blender you may need to strain the mixture at this point
  • When cool, garnish with tarragon and serve
