Corn Fritters – Little Big H

These corn fritters are perfect as a starter to a main meal or they make a great light lunch or breakfast, just top with a poached egg and you have yourself a quick but healthy meal in a flash.

You could also make them mini sized and serve them as finger food at your next party, topped with smoked salmon and a dollop of creme fraise.

  • 1 cup (150g) self raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 eggs ,separated
  • 2 cups (330g) corn kernels (fresh or frozen are fine. If using frozen let them defrost on the counter before adding to batter)
  • 2 green onions
  • 2 tablespoons finely chopped fresh coriander + a few extra leaves to garnish
  • Sift flour, soda, salt, cumin into a medium bowl. Gradually stir in the milk and the egg yolks unit the batter is smooth. Stir corn, onion, and corridor into batter
  • Beat egg whites with an electric mixer until soft peeks are formed; fold into batter. Pour 2 tablespoons of batter into a heated oiled frying pan. Cook for about 2 minutes each side. Remove from pan and cover to keep warm. Repeat until all the batter is used. Serve garnished with coriander leaves

Makes about 18 fritters. They freeze well so freeze whatever you don’t use for another time. Like a quick dinner in a flash.
For the smoked salmon corn fritters. Combine some creme fraise with a little lemon juice. Top corn fritters with some smoked salmon and a dollop of creme fraise. Garnish with coriander leaves

Ginger Tapioca Puddings with Lychees and Mint – Little Big H

  • 200 g tapioca pearls (about a cup)
  • 1/2 teaspoon of finely grated ginger
  • 150 ml sweetened condensed milk
  • Tin or fresh lychees – about 10
  • 6 springs mint
  • Fill a saucepan with water and bring to the boil. Add the tapioca pearls, stirring occasionally to make sure they don’t stick. Simmer until they are almost completely transparent with just a small speck of white in the middle (around 10 minutes). Drain and refresh under cold water; add to a bowl and set aside
  • In another saucepan add the sweetened condensed milk and the ginger. Simmer over low heat for 5 minutes to allow the ginger to infuse. Then add to the tapioca pearls and stir to combine. Pour the mixture into individual pots and allow to cool in the fridge. The mixture will set slightly
  • Top each serving with a whole lychee and roughly chop the remaining lychees with the mint to also garnish the pots

You can freeze the mixture and simply warm in the microwave to serveUse any fresh tropical fruit that you like

For a sugar free option – replace the sweetened condensed milk with just milk and use a sugar substitute to sweeten

What we ate this week…2 – Little Big H

More like the past two weeks but I thought I would include them all anyway.  If something catches your eye let me know, and I will post the full recipe on the blog or send it to you personally.  H and I have been away, visiting my mum in Newcastle so I have been a little slack with the posts and with Instagram.  

1 – Aussie Blue-eye with skordalia.  Roasted lemon potatoes, fennel and zucchini

2 – Andalucian Lamb Stew with saffron from Gourmet Traveller

3 – Corned Beef in broth with baby carrots, potatoes and peas

4 – Crepes with berries and maple syrup

5 – Crispy skinned duck legs

6 – Salad of baby beets, goats cheese, leaves and a balsamic vinaigrette 

7 – Flat head fillets with a salad of chickpeas, avocado and tomato.  Vanilla poached pear for dessert

8 – No-bake vegan chocolate slice from Jamie Oliver or try my version here

9 – Saffron chicken with rice from Neil Perry’s ‘Good Food’ cookbook available here

10 – Muesli with puffed amaranth and currant.  Natural yoghurt, blueberries & strawberry coulis

11 – Pear pastries.  Cut 1 puff pasty sheet in 4, place pear on top. Sprinkle with cinnamon and brown sugar. Brush with butter and bake (200 degrees C) for about 15 minutes or until golden.  Easiest dessert ever!

12 – Smoked salmon with apple, dill, lemon zest, creme fraise

13 – Big bowl of steamed veggies with spiced lentil – a super quick and healthy lunch

14 – Orange salad with dates, goats cheese rolled in crushed pistachio, and a rose-water syrup.  Adapted from Gourmet traveller

Baby Fish Pies – Little Big H

This is a really easy fish pie to make and it tastes great…  You can make them baby sized like I have and freeze whats left or make one large pie and feed  your entire family.

  • 1 salmon fillet – skin off & bones removed (approximately 150 g)
  • 1 large tomato
  • 1 carrot
  • 3 stalks rainbow chard
  • parsley
  • 1 lemon
  • 4 potatoes
  • 2 tbls creme fraise
  • butter/milk
  • 1/2 tsp nutmeg
  • Pre-heat oven to 200 degrees C (400 degrees F)
  • Peel and chop the potatoes; cook on the stove top in boiling water until tender. Once cooked, mash or put through a potato ricer and add a tablespoon or two of butter and a splash of milk. Mix & set aside.
  • Blanch the rainbow chard in boiling water and finely chop along with the tomato, parsley and salmon. Grate the carrot and combine all ingredients in a bowl. Add the juice of half a lemon along with the zest, the creme fraise & the nutmeg.
  • Add filling to 6 ramekins and top with the potato prepared earlier
  • Cook for 40 minutes, serve warm

Makes approximately 6, 100ml individual pies
Suitable to freeze
