Chunky Sesame Prawn Toasts – Little Big H

Chunky sesame prawn toasts are sure to be a hit with young and old.  They are super crispy, quick to make, tasty little triangles that are great served at parties, for lunch or as a starter to your main meal. 

I have used delicious plump fresh prawns for this recipe but frozen would work just as well.  All you have to do is chop the prawns, add the remaining ingredients and coat in sesame seeds.  

I have then cooked these babies in the oven until golden brown.  Go ahead and fry them if you like.  Not as healthy but I’m sure even tastier!

  • 6 slices of bread; crusts removed and cut into quarters (I’ve used white rye)
  • 300 g raw prawns; chopped
  • 1 teaspoon minced ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 egg white; lightly whisked
  • pinch of salt
  • sesame seeds to coat (black or white)
  • Pre-heat the oven to 180 C / 350 F. Combine the prawn meat with the ginger, sesame oil, soy sauce, egg white and salt. Stir to combine.
  • Add the mixture to the bread triangles. About a tablespoon per triangle. Put as much on them as you can. Coat the triangles in the sesame seeds and place on a oven tray.
  • Cook for about 20 – 25 minutes or until the prawns are cooked and nice and golden. Serve warm.

I chopped my prawn quite chunky. If finely chopping reduce the cooking time a little.

I couldn’t resist buying these super cute minikin pumpkins.  I have stuffed them with pearl barley and mixed veggies and it did quite nicely for a healthy meat-free dinner. Slice into portions or scoop out the flesh along with the pearl barley and mash for your little one.

This is a really easy fish pie to make and it tastes great…  You can make them baby sized like I have and freeze whats left or make one large pie and feed  your entire family.  

 This is a really tasty dish and it was a huge hit with H.  You could substitute the vegetables in the recipe for ones you already have in the fridge.  You could also prepare ahead of time and keep in the fridge until ready to steam and serve.

 This is a subtle tasting smoothie with blueberries and rock melon – perfect for younger babies.  (Suitable for babies from 6 months of age, if you have introduced all the components individually)

Coconut and Puffed Amaranth Muesli Squares – Little Big H

Puffed amaranth is an ingredient that I stumbled upon at my local health food store recently and I love it.  It is great to add to dishes like muesli bars and on your breakfast.  I love to add it to yoghurt.  It sort of melts into it and make it very fluffy.  

I have bought it already popped or you can buy the grain and pop it yourself.  It will be a staple in my cupboard from now on.

  • 1/2 cup (50g) quinoa flakes
  • 2 cups (60g) puffed amaranth
  • 1/3 cup (50g) rice flour
  • 1/2 desiccated coconut
  • 1/2 cup sultanas
  • 1 1/2 cups dried apple (or any dried fruit you like)
  • 1/4 cup pepitas
  • 1/2 cup coconut oil
  • 2 eggs
  • 3/4 cup maple syrup
  • Pre-heat oven to 160 degrees C (325 degrees F). Line a 20cm x 30cm slice tin with non-stick paper. Place the quinoa flakes, puffed amaranth, rice flour, coconut, sultanas, apple and pepitas in a large bowl and mix to combine. Whisk together the coconut oil, eggs and maple; add to the puffed amaranth mixture and stir until well combined
  • Spoon mixture into the prepared tin and use the back of the spoon to smooth the surface. Bake for 40 minutes or until golden brown and set. Cool in tin for 15 minutes, transfer to the fridge and chill until firm. Slice into squares and serve

Will keep in the fridge for a week. Or they freeze really well. Puffed amaranth is available from health food stores Adapted from Donna Hay Magazine – Kids issue 11, 2014

A delicious green smoothie that isn’t at all leafy tasting.  H just loves it – he finished the glass in a matter of minutes!

This is a delicate tasting puree and a great introduction to fish for your baby.  Any delicate tasting white fish will be fine in the recipe and combined with the witlof (Belgian endive) it is a lovely combination.
